Stuffed Peppers
4-6 green or red peppers (large)
1 1/4 lb. ground beef
1 small chopped onion
1 can diced tomatoes
1 cup cooked rice
1 can V-8 juice (12 oz.)
1 can tomato juice (12 oz.)
cheese and sugar
Remove tops and seeds of peppers and parboil them five minutes.
Brown meat and drain. Add all ingredients to meat except tomato juice.
Stuff peppers. Put a block of cheese down into each stuffed pepper.
Pour tomato juice over peppers and bake at 350° for one hour.
(1/2 covered, 1/2 uncovered.)
