Southwest Easy Oven Chicken
1 cup low-sodium chicken broth
One 15-ounce can black beans, rinsed and drained
One 15-ounce can red kidney beans, rinsed and drained
3/4 cup mild salsa
2 garlic cloves, minced
1 pound skinless boneless chicken breasts, cut into 2" pieces
1. Preheat the oven to 350º F.
2. In a 13 X 9" baking pan, combine the broth, the beans, salsa and garlic. Add
the chicken and baste with some of the liquid.
3. Bake, stirring once, until the chicken is cooked through and the liquid is
reduced, about 45 minutes.
