Turkey Soft Tacos Recipe


Turkey Soft Tacos       




Ingredients:
3/4 pound ground skinless turkey breast
1 onion chopped
2 garlic cloves, minced
1 cup canned black beans, rinsed and drained
1 green bell pepper, seeded and diced
One 8-ounce can tomato sauce (no salt added)
1 jalapeno pepper, seeded, de-veined and chopped (wear gloves to prevent irritation)
2 teaspoons ground cumin
2 teaspoons chili powder
1/2 teaspoon dried oregano
Eight 6” fat free flour tortillas, warmed
2 cups shredded lettuce
1 tomato, chopped




Method:
1. Spray a large nonstick skillet with nonstick cooking spray; heat. Add the turkey, onion and garlic; cook, stir­ring as needed, until the turkey is browned and the onion is softened, about 5 minutes.

2. Add the beans, bell pepper, tomato sauce, jalapeno, cumin, chili powder and oregano; bring to a boil. Reduce the heat and simmer, uncovered, stirring as needed, until the flavors are blended, 10-15 minutes.

3. Top the tortillas with the turkey mixture, lettuce and tomato; roll up and serve.
