1 Tab. Canola Oil
1/4 Small Onion (optional)
1 1/2 Tsp. Ground Cumin (optional)
1 - 15 oz. Can of Pinto or Black Beans, un-drained
2 Tab. Fresh Mexican cheese , crumbled
Salt and Pepper to taste
In medium bowl, mash beans. If using onion and/or garlic and cumin, cook in oil
in medium skillet over medium heat until soft. If not using onion or garlic heat
oil and add beans, salt and pepper cook stirring often until liquid starts to
evaporate. Reduce heat and simmer till desired consistency about 5 minutes.
Serve with cheese sprinkled on top.
